Garbage Pail Pasta

Here's 'e Curti's recipe for "Garbage Pail" pasta.  It's a new favorite in my kitchen.

Garbage Pail Pasta

3 tablespoons Extra virgin
1 tablespoon walnuts
1 tablespoon hazelnuts
1 tablespoon pine nuts
2 tablespoons raisins
1 tablespoon salt-packed capers, rinsed, drained
½ tsp. oregano
¼ cup cherry tomatoes, halved
1 tsp. minced flat-leaf parsley
5-6 pitted black olives (Gaeta olives are best, Angelina says, because they don't stain the tomato), roughly chopped
Sea salt
8 oz. spaghetti

Heat the extra virgin in a large skillet, add the nuts and lightly brown.  Add the tomatoes, capers and oregano and cook over low heat to wilt tomatoes.  Add the parsley, olives and season with salt.

Cook the spaghetti in 5 or 6 quarts of salted water until very al dente.  Drain pasta, reserving some of the pasta cooking water, and add pasta to sauce in the skillet.  Stir to finish cooking pasta with sauce.  Add some of the pasta cooking water if sauce dries out.
